How to make a superbly delicious carrot cake?!

With this recipe, you will learn how to make a delicious carrot cake, the best you will ever taste! You will also learn some useful English vocabulary related to baking, including some conversion tips for measurement units.

INGREDIENTS

  • 2 cups all-purpose flour  -  1 cup=240 ml. 
  • teaspoons baking powder  -  1 teaspoon=5gr (cuillère à café)
  • 2 teaspoons baking soda  -  Baking soda and baking powder are white powders used as raising agents in cakes. (bicarbonate de soude et levure chimique)
  • 2 teaspoons ground cinnamon
  • ¾ teaspoon salt
  • 3 cups grated carrots
  • 1 cup coarsely chopped walnuts or pecans
  • 1 cup shredded coconut
  • ½ cup moist, plump raisins or dried cranberries
  • 2 cups sugar
  • 1 cup canola oil
  • 4 large eggs

FOR THE FROSTING:

  • 8 ounces cream cheese, at room temperature   a ounce is a unit of measure. 1 ounce = 28 gr
  • tablespoons unsalted butter, at room temperature  -  tablespoon =a spoon used for eating soup (cuillère à soupe)
  • 1 pound (3 3/4 cups) confectioners  -  pound is equivalent to 453,6 gr
  • 1 tablespoon fresh lemon juice

PREPARATION

  1. For the cake: Position the racks to divide the oven into thirds and preheat the oven to 325 degrees. Butter and flour 9-inch round, 2-inch deep cake pans, flour the insides and tap out the excess.

Position the racks (in the oven)= on the grid at mid-height (sur la grille du milieu du four)

Inch: unit of measure. 1 inch = 2.54 cm

To flour: to put flour (farine) on something

Pan: oven container (moule)

 

  1. Whisk together the flour, cinnamon, baking soda, baking powder and salt and set aside. In another bowl, stir together the carrots, chopped nuts, coconut and raisins.

To set aside : to reserve (réserver, mettre de côté) 

  1. Working in a large bowl with a whisk, beat the sugar and oil together until smooth. Add the eggs one by one and continue to beat until the batter is even smoother. Mix until the dry ingredients disappear. Just as gently, stir in the chunky ingredient.

Whisk / to whisk : I whisked egg whites with sugar to make meringue (fouet/fouetter)

Smooth : fluid (fluide/onctueux)

Stir in = mix with, put into, beat in (incorporer) 

  1. Divide the batter among the baking pans and slide the pans into the oven. Bake the cakes for 40 to 50 minutes. The cakes are properly baked when a knife inserted into the centers of the cakes comes out clean; Transfer the pans to cooling racks, cool for 5 minutes, then turn out onto racks to cool to room temperature.

Be wrapped airtight : (être emballé hermétiquement) 

  1. For the frosting: Working in a mixer fitted with the paddle attachment, beat the cream cheese and butter together until smooth and creamy. Gradually add the sugar and continue to beat until the frosting is velvety smooth. Beat in the lemon juice. 
  1. To frost the cake, place 1 cake layer on a large plate and cover the top with about 1/3 of the frosting. Invert the second layer on top of the frosted bottom layer so that the flat side (the bottom) is on top. Spread the remaining frosting on the sides and top of the cake.

To frost : to ice a cake (glacer, procéder au glaçage)

Layer: cover (couche, côté)

Spread: disperse, distribute (répartir) 

  1. Slide the cake into the refrigerator for 15 minutes, just to set the frosting. The cake can be served as soon as the frosting is set.
